Ingredients:

• 1 cup sabudana (sago pearls)

• 1 medium potato, diced

• 2 tablespoons peanuts, roasted & crushed

• 1 green chili, finely chopped

• 1 teaspoon cumin seeds

• 4-5 curry leaves

• 1 tablespoon lemon juice

• 2 tablespoons ghee or oil

• Salt (sendha namak for fasting)

• 2 tablespoons coriander leaves, chopped


Instructions:

1. Soak the Sabudana: Wash sabudana thoroughly and soak in water for 4-5 hours (or overnight). Drain excess water and let it rest for 15 minutes.

2. Cook the Potato: Heat ghee in a pan, add cumin seeds and let them splutter. Add chopped green chilies and diced potatoes. Cook until soft.

3. Add Sabudana & Peanuts: Add soaked sabudana, crushed peanuts, and salt. Stir gently and cook on low heat for 5-7 minutes.

4. Finish with Lemon & Coriander: Add lemon juice and chopped coriander leaves. Mix well and serve hot.

• 2 medium potatoes, boiled & mashed

• 2 tablespoons peanuts, roasted & crushed

• Salt (sendha namak for fasting)

• 2 tablespoons coriander leaves, chopped

• Oil for deep frying

2. Shape into Vadas: Take small portions, shape into patties, and flatten them slightly.
