Ingredients:
For Dabeli Masala (Homemade Version)
• 2 dried red chilies
• 1 teaspoon cumin seeds
• 1 teaspoon coriander seeds
• ½ teaspoon fennel seeds
• ½ teaspoon cinnamon powder
• 2 cloves
• ½ teaspoon black salt
• 1 teaspoon sugar
• 1 teaspoon dry mango powder (amchur)
• ½ teaspoon red chili powder
(Alternatively, you can use ready-made Dabeli Masala available in stores.)
For Potato Filling
• 2 medium potatoes, boiled and mashed
• 1 tablespoon oil
• 1 teaspoon Dabeli masala
• 1 teaspoon tamarind chutney
• 2 tablespoons water
• Salt to taste
For Assembling Dabeli
• 4 pav (burger buns)
• 2 tablespoons butter
• ¼ cup spicy masala peanuts (roasted)
• ¼ cup pomegranate seeds
• ¼ cup sev (thin crispy gram flour noodles)
• 2 tablespoons chopped coriander
• ¼ cup tamarind chutney
• ¼ cup garlic chutney (optional, for spice)
• ¼ cup grated coconut (optional)
Instructions:
Step 1: Prepare Dabeli Masala
1. Dry roast red chilies, cumin, coriander, fennel seeds, cloves, and cinnamon for 1 minute.
2. Grind into a fine powder and mix with black salt, sugar, amchur, and red chili powder.
Step 2: Make the Potato Filling
1. Heat oil in a pan and add Dabeli masala.
2. Add mashed potatoes, tamarind chutney, salt, and mix well.
3. Cook for 2 minutes and add a little water if needed. Turn off the flame.
4. Garnish with roasted peanuts, pomegranate seeds, and coriander.
Step 3: Assemble the Dabeli
1. Slice pav buns and spread tamarind chutney on one side and garlic chutney on the other.
2. Stuff the prepared potato mixture inside.
3. Heat butter in a pan and toast the pav until golden brown.
4. Roll the edges of the stuffed pav in sev and top with more pomegranate seeds.
Step 4: Serve & Enjoy!
